Starting his career as a Pastry Chef in 2006 after coming to Canada from the Philippines, Tan is Hyatt’s resident expert on all things dessert. Keep an eye out for treats like cherry pie, chocolate amaretto cheesecake and the Stampede inspired mini donut stacks. His personal favourite, the creme egg brownie, is a fun take on an Easter egg hunt. If it’s your first time joining Thomsons for Easter, Tan says that the flapper pie in a jar is the must-try dessert. Custard, graham crackers and torched meringue make up this tasty Canadian prairie staple. If pastries aren’t your style, just wait until you see the candy station- perfect for the kids (at heart).
