Since Easter is only a couple of days away, preparations are in full swing for the amazing spread and reservations are filling up. Thanks to these initiatives you can be confident that your brunch will not only be fresh and delicious, but working towards a greener planet too.

For those with a sweet tooth, the expansive dessert table at Thomsons’ Easter Brunch will be second to none. Gerald Tan is the one to credit with this indulgent and diverse dessert selection. Starting his career as a Pastry Chef in 2006 after coming to Canada from the Philippines, Tan is Hyatt’s resident expert on all things dessert. Keep an eye out for treats like cherry pie, chocolate amaretto cheesecake and the Stampede inspired mini donut stacks. His personal favourite, the creme egg brownie, is a fun take on an Easter egg hunt. If it’s your first time joining Thomsons for Easter, Tan says that the flapper pie in a jar is the must-try dessert. Custard, graham crackers and torched meringue make up this tasty Canadian prairie staple. If pastries aren’t your style, just wait until you see the candy station- perfect for the kids (at heart).

Tasty eats and yummy treats aside, the Hyatt has a feast for the eyes as well. While you’re admiring all the colorful food you’re about to eat, make sure you don’t overlook the great sculptures around the restaurant.
